In a country of washed processed coffees, Antonio Gonzales is one of the few producers that experiment with processing methods.
At his farm in Frajianes, Antonio cultivates mostly red and yellow Catuai under the shade of Gravilea and Avocado trees. Ripe cherries are handpicked and processed on the same day. Antonio then selects some micro lots for honey and natural processing.
This particular lot is processed as honey. After de-pulping the cherries, part of the mucilage is left on the shade drying parchment coffee in order to alter the taste profile. In this case, the processing has resulted in high sweetness, great viscosity, and loads of tropical fruit notes like pineapple and maracuja.
