This delightful, washed Parainema was produced by Juan Evangelista Fernandez, a young-at-heart coffee producer with around 70 years of experience in coffee farming.
Filter coffee:
Floral hibiscus-like notes, sweet acidity of pear cider, and candied lemons with underlying soft, buttery macadamia notes.
The Producer:
This is our fourth year working with coffee from Juan Evangelista Fernandez, who has been a coffee producer for over 70 years. With this many years under his belt and his extremely amicable, fun-loving personality, it's not hard to understand why he is so highly respected and loved by his community.
Juan is somewhat a forerunner, much like his father, who was one of the first to settle in the area now known as Las Flores. Juan himself is regarded as the first to start cultivating Parainema in the Santa Barbara region and was among the first producers to shift to specialty coffee. For the past ten years, he has been farming a land he calls La Maravilla—the wonder.
Juan cultivates Parainema together with his family with excellent results. Quite recently, they have built a second wet mill, which has allowed the family to process their coffee closer to where it is picked, saving time and trouble.
The Santa Bárbara region is very famous for its coffee quality. In recent years, most of the coffees in the Honduran Cup of Excellence competition come from this region. This region is also one of the first places we visited with our first trip to the origin and holds a very special place in our hearts.
